Oatmeal and yoghurt cookies without sugar

Cookies are a great classic. The sweets, the thickets, the simple… They are essential at home and they are perfect to accompany the coffee of the afternoon or with the breakfast.

However, the recipe we offer you does not include any type of sweetener. It’s a very different kind of cookie than what you’re used to eating. This is why we offer two recipes:  one without sweetener and another which contains, among its ingredients, honey.

They are both equally nutritious since they are made from oats and yogurt. They are definitely a healthy option. Don’t miss these recipes!

Recipe 1: Oatmeal Yogurt Cookies Without Sugar

Ingredients

  • 200 g oat shavings
  • 4 eggs
  • 1 pinch of salt
  • 45 g of natural yogurt (thick yogurt)
  • A teaspoon of olive oil
  • A teaspoon of vanilla extract
  • Cinnamon powder

Preparation

  • Preheat the oven to 180 ° C.
  • In a bowl, mix the eggs with the vanilla and beat. Then gradually add the yogurt while continuing to mix. Be sure to  drain the yogurt well.
  • Add the oil and salt. Continue to mix.
  • Pour in the oats and cinnamon. Continue to mix  until you get a slightly liquid dough so you can give it a shape.
  • Then butter a baking sheet. Using a tablespoon, pour small amounts of dough onto the baking sheet and shape each cookie with your hand or spoon.
  • Place the baking sheet in the oven. Bake for 15 to 20 minutes until the cookies are golden. 
  • Take out of the oven and wait for them to cool. Enjoy your meal !

Recipe 2: Oatmeal Yogurt Cookies with Honey

Ingredients

  • 1 cup of natural yogurt
  • A cup of oat shavings
  • 1 cup of oatmeal
  • 3 tablespoons of butter or vegetable margarine
  • 2 eggs
  • 1 teaspoon of baking powder
  • 5 tablespoons of honey

Preparation

  • Preheat the oven to 200 ° C.
  • In a bowl, add the butter at room temperature and the honey. Mix until a homogeneous paste is obtained.
  • Then add the oats, flour and baking powder. Continue to mix. You can add cinnamon to give your cookies more flavor.
  • Then add the cup of yogurt and the eggs. Mix well until you obtain a homogeneous and uniform paste.
  • Butter a baking sheet. Pour small amounts of dough on the baking sheet and shape the cookies. Be sure to separate them to prevent them from sticking together during cooking.
  • Finally, put the baking sheet in the oven . Bake for 20 minutes at 200 ° C.
  • Take the cookies out of the oven and let cool. It’s ready !

Some extras

  • You can add chia seeds or any other type of seed in both recipes. For the second recipe, you can also include dried fruit in pieces or even raisins,  for example
  • Be aware that these cookies will not rise much during baking. Thus, the thinner you make them, the crisper they will be when they come out of the oven.
  • Although we suggest that you use plain yogurt, you can also choose fruit yogurt. It can go well with oats and your cookies will be even tastier.
  • In addition, if you wish,  you can make larger shapes  and thus obtain tarts instead of cookies. You can add whatever you want on top (jam, cheese, etc.) and enjoy it in a different way

Finally, you should know that these cookies are perfect for breakfast, afternoon snack, as a snack and also for lunch for children at school. Consume them with a good fresh fruit juice and  you will get a very good supply of nutrients.
