  • 1/2 onion (30 g)
  • 1 bay leaf
  • 1 stalk of celery (30 g)
  • 10 sprigs of parsley (5 g)
  • 1 bag of potatoes (200 g)
  • 2 cloves of garlic (2.5 g)
  • 2 chicken breasts (250 g)
  • 1 packet of carrots (200 g)
  • 1/2 cup of mayonnaise (100 g)
  • 1 teaspoon of mustard sauce (5 g)
  • Black pepper and salt (to taste)

  • First, to prepare this chicken salad recipe with vegetables, start   by cooking the carrots and potatoes, previously peeled, in a saucepan with water and salt. Place the whole vegetables in the pot, and remove the carrots after about 8 minutes in the boiling water.
  • In addition, leave the potatoes for 20 to 25 minutes on the heat. If you prick them with a fork, you will be able to better control their cooking point and make sure that they do not remain raw in their center.
  • Then place the chicken breasts in another saucepan, also filled with water, and add the onion and garlic cloves cut into small pieces.
  • In addition, add the bay leaf and a little salt to your liking. Cook this mixture over low heat until the water begins to boil. At this point, lower the heat to minimum and continue cooking for another 15 minutes.
  • Once the potatoes and carrots are ready, cut them into small pieces and, on the other hand, take back the chicken breasts, which will be ready and well cooked.
  • Place all the ingredients in a separate bowl and add the mayonnaise and mustard. Finally, mix well to distribute the sauces, and your salad is ready.

It’s a perfect dish for any spring dinner. To prepare this recipe, in a ration for about two people, you will need the ingredients below. 

Ingredients

  • 1/2 cucumber (30 g)
  • 1/2 lettuce (100 g)
  • 2 tomatoes (120 g)
  • 2 mandarins (60 g)
  • 1 chicken breast (100 g)
  • 1/2 cup sweet corn (50 g)
  • 1 tablespoon of honey (5 ml)
  • 1/4 cup grated cheese (30 g)
  • 1 tablespoon of lemon juice (5 ml)
  • 2 tablespoons of olive oil (10 ml)
  • 1 tablespoon of apple cider vinegar (5 ml)

Preparing the salad

  • To prepare this delicious salad, we first wash the tomatoes, cucumber and lettuce. Cut the tomato and cucumber into small pieces and the lettuce into strips. Once ready, we will mix everything in a bowl.
  • Then we have to put the chicken on a hot pan with one of the tablespoons of olive oil, and we turn it until it is well cooked inside.
  • Then remove it to a plate and slice it, to make sure it is cooked through. If the chicken in some areas is a little red, we can go back to this piece to finish cooking.
