Ingredients

  • 1 cup of oatmeal (120 g)
  • 1/2 cup oatmeal (30 g)
  • 2 tablespoons of brewer’s yeast (30 g)
  • 1 whole egg
  • 2 egg whites
  • 3 ripe bananas
  • 1 tablespoon of ground cinnamon (15 g)
  • 2 tablespoons of ground walnuts (40 g)
  • 1/2 glass of soy milk (100 ml)
  • 1 pinch of vanilla extract
  • 2 tablespoons of natural sweetener (3o ml) – optional

Preparation

  1. Peel the bananas, and mash them so as to obtain a mashed bananas.
  2. Mix the mashed bananas with the oats and oatmeal. Gradually incorporate the ingredients. For a perfect consistency, the dough should not contain any lumps.
  3. Stir in the crushed nuts, egg, baking powder, vanilla extract and cinnamon powder. If you like, add a pinch of your natural sweetener of choice.
  4. Mix everything slowly, while gradually pouring in the soy milk.
  5. Incorporate the two egg whites, and mix again.
  6. Place the preparation on an oven dish previously greased with olive oil. Bake for 40 minutes at 180 degrees.
  7. That’s it ! All you have to do is taste this delicious banana bread!
